I thought it would be a great idea to share My Latest Healthy Protein Bar Experiment with YOU…
I have a bunch of tried and true protein/nutrition bar & cookie recipes I’ve been making for years, and lately I’ve been pushing the limits on certain recipes to get more mileage and benefits out of them…
I do want to bring these to market because everyone who tries them is BLOWN AWAY by the taste and the “fitness effects”, so I’ll be keeping you posted about timing on that…
While not perfect, and considering I didn’t follow a “specific” recipe, These All-Natural, Mystery Protein Bars Are “LIIT” (LIIT in terms of the slang word – and in terms of being in line with my LIIT approach to fitness and workouts).
I’ll share more details and recipe specifics in future videos/posts – but for now, I’ll share most of what went into this spur of the moment protein bar experiment.
1 – Organic Coconut Flour ( International link is here )
2 – Hemp Protein Powder ( Intl link is here )
3 – Organic Chia Seeds
4 – Organic Flax Meal
5 – Organic Stevia Powder
6 – Dark Chocolate Chips from Trader Joe’s
7 – Organic Coconut Sugar
8 – Organic Superfood Powder
9 – Water
From the refrigerator, these nutrient-dense, appetite suppressing, super-satisfying, organic, healthy protein bars are actually quite tasty. BUT, at room temp, they got very soft and hard to handle…
My “test bar” that I left on the counter fell apart when I tried picking it up. So, I’ll be going back to the drawing board in the next week or two, with the goals of creating a “room temp” protein bar that will also travel well.
If you enjoyed this “Atlas In the Kitchen” video, please do share it with someone you know who will appreciate it. Just use the ‘easy’ buttons below, and help speread the word of proper fitness and health enhancing nutrition.

Maybe you could leave out the coconut sugar and add a small number of fresh dates to help bind it together.
Joey Atlas says
That’s a possibility, Amanda! But want to keep overall ‘sugar’ carbs low…. Lots of experimentation to do here 🙂
Amanda says
You could mix the water with the chia seeds and leave it for ten minutes, to make a thick chia gel. Then mix in all the other ingredients.
Joey Atlas says
I’m making more today – will try more chia and do this step first… Still might need to add ‘something else’…
Thanks, Amanda!! 🙂

How about adding some pulverized nuts.
What is the predominant flavor?
Joey Atlas says
YES… nuts will be added in some of the next renditions/flavors 🙂
For this one – it was a ‘mixed’ flavor… slight hint of coffee/cacao/coconut.

Looks delish…I make bars like that too and they are awesome. I have to skip the flax as I am allergic and I was thinking I was the only one but lately I am finding more people allergic to tlax then I thought 🙁
Great recipe Joey!!! Keep it up..love it!!
Joey Atlas says
Thanks, Sherri! I hear you on the flax – some ok with it, some not. Not to worry as there are plenty of other good things if we take those out.
THANKS! 🙂
Sherri Rummel says
So right Joey 🙂 I am thinking about replacing the flax with hemp seeds:)
I’ll let you know how they get:)
Have an amazing day!!!
Joey Atlas says
Yes! Keep me posted!

Hey Joey, Thanks so much for sharing your recipe for the protein bars. I stopped buying bars because they were not healthy & soy & so much sugar was in them. These sound wonderful. I can’t wait to make them.
Joey can I ask U a ? Instead of the stevia & coconut sugar can I add raw honey instead. I always get my honey from a bee keeper where I live. I never use store bought honey nor do I use any type of sugar. Thanks
Joey Atlas says
You’re welcome Lee, YES – raw honey works!! 🙂
Noelle says
I would just put it in a small container and EAT IT WITH A SPOON! Haha! 😀
